Nic Mink is an academic and entrepreneur who has spent the last two decades probing the depths of American food through his work in the classroom, archives, and C-Suite. He holds a B.A. and PhD in History from the University of Wisconsin and currently serves as President of Seven Acre Dairy Company, a start-up farmstead dairy brand and tourist destination located in a historic cheese factory on the banks of the Sugar River near Madison, Wisconsin. In a past life, he was co-founder of Indy Food Council, CEO and co-founder of Sitka Salmon Shares, a member of Ernie Mellor’s 2005 prize-winning BBQ team at the World Championship BBQ Cooking Contest in Memphis, and one of America’s top Food Artisans, as named by Food and Wine magazine.
